Apple Cider Vinaigrette
    Apple Cider Vinaigrette
  • 1/4 cup Apple Cider Vinegar
  • 2 tbsp Apple Cider
  • 1/2 cup Olive Oil
  • 2 tbsp Shallot
  • 1 clove Garlic
  • 2 tsp Fresh Thyme Leaves
  • Salad
  • 12 oz Arugula
  • 1/2 cup Fennel, Sliced
  • 2 Apples, Sliced
  • 4 oz White Cheddar, 1/4" Cubes
  • 1/2 cup Pickled Red Onions
  • 1/2 cup Pumpkin Brittle, Crumbled
Instructions

    Apple Cider Vinaigrette
    1. Place all ingredients up until the fresh thyme, except olive oil in a blender, mix for 30 seconds.
    2. Slowly drizzle olive oil until completely mixed in, season to taste.

    1. Place all salad ingredients in a bowl and toss with the vinaigrette. Enjoy!
