Ingredients
  • 1/2 Seedless Cucumber, Small Dice
  • 1 Roma Tomatoes, Deseeded & Diced Small
  • 1/2 cup Parsley, Chopped
  • 1/2 cup Red Onion, Chopped
  • 3/4 cups Feta, Crumbled
  • 1/2 cup Pitted Kalamata Olives
  • 2 tablespoons Greek Olive Oil
  • 2 Zest and Juice of 2 Lemons
  • 1 pinch Salt and Pepper
Instructions
  1. Toss All Ingredients together and season to taste. Serve over hummus or on its own, enjoy!
