Quick Pickles

Description

Pickled fruits and vegetables add such an exciting element to any dish. Whether you are looking to bring in some spicy, sharp and pungent kicks, or soft and subtle hints, the combinations are endless and so much fun to discover. With a few household ingredients, some leftover produce and about 15 minutes time, you can start experimenting in your own kitchen!!

Ingredients
  • 1 Cup White Vinegar
  • 1/2 Cup Water
  • 3 Tbsp Sugar
  • 2 Tbsp Salt
  • 1 tsp Black Pepper
  • 1 Tbsp Coriander
  • 1 Tbsp Dried Dill
  • 2 Cup Sliced Pickling Cucumbers or Persian Cucumbers
Instructions

    Add your sliced cucumbers to a large glass bowl (a metal bowl can react with the acid in the vinegar, so glass is best.)

    Add all other ingredients to a small saucepan and bring up to a good hard simmer.

    Stir to dissolve the salt and sugar.

      Just as it is about to boil, remove from the heat and pour over cucumbers. Stir and make sure they are covered with liquid.

    Let cool at room temperature, then refrigerate. They are ready to enjoy in about 2 hours!!
