Custard Filling
In a medium to large saucepan, whisk together all ingredients, whisk your eggs in a separate bowl. Bring to a simmer over medium heat. It will take about 5 minutes to come to a simmer & begin to thicken a bit. While whisking your eggs, slowly drizzle in 2 ladles full of your warm mixture, to temper them. Once mixed together, pour entire bowl back into the simmer pan and continue to cook. Bring this up to a gentle boil, while whisking constantly. It will take about 3 minutes to thicken to a perfect custard/pudding like consistency. Let cool in your pan for a few minutes before pouring into a bowl to cool. Make sure to place plastic wrap directly onto the surface of the custard while cooling, to prevent a skin from forming.

Whipped Cream
Pour all ingredients into your mixer with the whip attachment & whip up to stiff peaks on medium speed, about 4 minutes. Keep cold until ready to use.

Crumb Topping
Using your blender, food processor, or a plastic bag and a rolling pin, crush your cookies or crackers. You can finely grind them, or if you would like some more texture, leave some larger pieces! For a fine grind, top speed on your blender for about 5 seconds, or food processor for about 30.
Note
To build your Parfait, begin layering ingredients, including sliced bananas😊 You can layer any way you would like, but I prefer to start with custard and end with whipped cream & bananas. Enjoy!
